Florida stone crabs are fished just for their claws and are returned to the ocean after one or both claws are harvested. While the actual survival rates of the crabs are unknown, it’s estimated that around 72 percent of single amputees and 53 percent of double amputees survive. Around 20 percent of the claws gathered in a given fishing season are regrown claws from previous catches.
